El agua al estar en contacto con el chocolate disuelve el az\u00facar y una vez que la humedad se evapora, el az\u00facar se cristaliza en la superficie dejando una capa blanquecina.<\/p>\n<p>La <strong>floraci\u00f3n de la grasa<\/strong> se puede identificar visualmente por una capa gris que se forma en la superficie del chocolate.
